In early October we took our table to a wild, golden field at West Bijou ranch, just outside of Denver. When we started planning our Colorado escape, going west to the mountains seemed the safest bet, instead, we dined in the middle of the beautiful eastern plains. Taking our guests to the Savory Institute’s holistically-managed ranch and learning site was an amazing experience, and an incredible way to celebrate our partnership with them as the non-profit benefitted through the Secret Supper-Roca Patrón Series.
After a short ride from the city, guests arrived at West Bijou where they were welcomed with refreshing Roca Patrón Silver, basil, sage, cucumber, lemon, and soda water cocktails crafted by Sean Kenyon, to pair with the pine nut black mission fig tartlets and fermented and pickled farmers market vegetables by Chef Jen Jasinski. After a brief introduction to the Savory Institute and their work, guests boarded the wagons for a little tour around the fields, where they watched the bison enjoy the grasslands.
Following the adventurous ride, everyone arrived at the dinner table, where mouthwatering food that included pinxtos moruno, bison and wagyu beef served on staves sourced from Hacienda Patrón’s tequila aging barrels was awaiting.
Midway through the experience, the sunset gave way to a mind-blowing, pink tinted sky and it was pure magic to see everyone relish every aspect of the evening and hear their laughter as they shared memories around the table.
After heavenly fire caramelized pears and a Roca Patrón Añejo cocktail for dessert, everyone lingered for a little while under the starry sky, before heading back to the city. Just like that, we wrapped up the third edition of the Secret Supper-Roca Patrón Series in memories we’ll cherish through the seasons!
It was incredible to be able to bring our guests to West Bijou and have them experience first-hand the important work that the Savory Institute is doing in sustainable agriculture through this awe-inspiring experience.

This Supper was the third of seven gatherings in the Secret Supper-Roca Patrón Series, brought to life in partnership with Patrón Tequila.
Rooted in sustainability and craftsmanship, the Secret Supper-Roca Patrón Series incorporated our known and loved communal dinners and Patrón’s artisanal time-honored “tahona” made tequila, Roca Patrón.
With similar brand ethos and sustainability at the forefront, Patrón is dedicated to limiting the environmental impact of their tequila production and holds sustainable practices in the highest regard. The best part of it all? 100% of proceeds from ticket sales benefited the Savory Institute, an organization that works on the large scale regeneration of the world’s grasslands to address desertification, climate change, and food and water insecurity.
