During cocktail hour, we were given the unique chance to step back from our end of the food chain, all the way to the source, through a live butchering demonstration in the barn. With a cocktail in hand, everyone in attendance was able to watch the craft of whole animal butchery unfold in front of them — moments before sitting down to try the results at the table.

Around dessert, the sky started to change — the Northern Lights turned what was a memorable Supper into a once-in-a-lifetime event, and we couldn’t be more thankful to Chef for the location change!

Ruska, in Finnish, means autumn foliage or the time in which autumn foliage occurs. For anyone who has spent a fall on the East Coast, it is easy to reminisce on the beautiful golden colors, the smell of crisp leaves, and the taste of apple cider doughnuts.
