In true Austin fashion for when we come to town, the rain lent its rhythmic accompaniment to yet another enchanting supper, this time at the stunning Windermere Farms. Under the protective embrace of a beautiful tent, our guests gathered to experience a culinary symphony orchestrated by the talented Chef Jo Chan. With a menu inspired by local flavors and a commitment to sourcing the finest ingredients, Chef Jo's creations promised an evening of gastronomic delight. The stage was set for a memorable night, with Flor de Caña Rum taking the spotlight with incredible cocktails and even a taste from the cask experience where guests could try 15 year rum directly from the cask! Davis Bynum wines were paired with each seated course. As the raindrops painted a gentle melody on the tent's canopy, attendees reveled in the magic of the moment, where exceptional cuisine and the soothing rhythm of rain converged for an unforgettable soirée at Windermere Farms.

WELCOME

We welcomed our guests with two stunning Flor de Caña cocktails: Flor de Caña Tepache - Flor de Caña 12, fermented pineapple, honey syrup, lemon juice + Flor de Caña Spicy Pear - Flor de Caña 12, pear puree syrup, miso-ginger syrup, lime juice

They were both the perfect start to our time together!

A MENU BY CHEF JO CHAN

Chef Jo Chan of Bureau de Poste in Austin created the most beautiful menu, rich in local vegetables and flavors. Our guests where treated to the most perfect Autumn feast.

Endive spear - cara cara orange, comte, walnut

Beef tartare - shabazi, cured egg yolk

Fresh oyster - cherry tomato, smoked olive oil

Fall Greens - pickled beets, celery, pine nuts, chevre

Wine: 2019 Davis Bynum Sauvignon Blanc, Virginia’s Block - Russian River Valley

SECOND

Garganelli - butternut squash, kale, shio koji buerre blanc

Wine: 2021 Davis Bynum River West Chardonnay, Russian River Valley

MAIN

Braised short rib - gremolata

Roasted fall vegetables - salsa verde

Wine: 2017 Davis Bynum Clone 667 Pinot Noir, Russian River Valley

DESSERT

Salted Caramel Chocolate Mousse - hazelnut crumble

WINE PAIRINGS

Stunning wines from Davis Bynum, in the Russian River Valley, CA were paired with our autumn menu. They were the perfect compliment for the hearty and comforting dishes!

NIGHTCAP

We ended our evening with a salted caramel chocolate mousse with another stunning cocktail by Flor de Caña - Flor de Caña Cane & Cloud - Flor de Caña 18, Amaro Montenegro, sweet vermouth, spiced  orange tropical foam. A fabulous close to our beautiful night together!

SECRET LOCATION: WINDEMERE FARM

Windemere Farm was the most stunning farm with their huge historic live oak trees all dressed in lights and their perfect green vista views.
