Amidst the gentle April rains, a unique dining experience unfolded at the picturesque Lake Austin Spa. The culinary and beverage teams from Lake Austin Spa and Elementary joined forces to craft an extraordinary supper under the comforting cover of shelter. As raindrops danced on the serene Lake Austin, guests were treated to a sensory journey curated by local talent. Sip by sip, they indulged in libations featuring the crisp notes of American Harvest Vodka, the rich warmth of Flor de Caña Rum, and the smooth elegance of Montagave Tequila. Rombauer wines added a perfect touch of sophistication to the evening. Under the protective canopy, guests reveled in the enchanting atmosphere, savoring each bite while watching the rain cascade down—a truly memorable blend of culinary delights and nature's embrace.

WELCOME

We welcomed our guests at check-in with yummy Salmon tartare with yuzu truffle aioli, furikake and flaming shiso paired with an American Harvest Organic Vodka cocktail - Bees Knees 

Guests then moved into Lake Austin Spa’s Culinary Garden for more bites and another stellar cocktail with Montagave Tequila - a Colorado River Sour

Chef Stephanie of Lake Austin Spa created the stunning cocktail bites to start our evening together and Chef Colter Peck of Elementary created the incredible following four seated courses. It was a such a treat to get to work with two incredible chefs for this special Supper!

WELCOME

Salmon tartare - Yuzu truffle aioli, furikake, flaming shiso

Cocktail: American Harvest Organic Vodka Bees Knees 

COCKTAIL HOUR

Lamb Kebabs - Smoked paprika marinated, olive tomato salad, yogurt sumac

Chickpea Panisse - Kasseri cheese, black olive caramel, cucumber blossoms

Cocktail: Montagave Tequila Colorado River Sour 

FIRST

Fennel salad -  Fresh shaved fennel, pickled fennel, citrus  shoyu vinaigrette, fermented apple, farm arugula, spiced almonds

Wine: 2022 Rombauer Vineyards Sauvignon Blanc

SECOND

Harissa charred broccolini  - Speck, Harissa oil, plum vinaigrette, shaved rainbow carrot, carrot puree, black tahini hummus

Wine: 2021 Rombauer Vineyards Proprietor Chardonnay

MAIN

Flat iron steak & polenta - Salsa macha,, shaved turnip, sunchoke chips

Wine: 2019 Rombauer Vineyards Napa Valley Cabernet Sauvignon

DESSERT

Cheesecake mousse -  Bergamot, graham cracker crumble, blueberry

Cocktail: Flor de Caña 25 Year Rum Neat

Stunning wines from Rombauer Vineyards were paired with each seated course - the perfect compliment to our menu!

NIGHTCAP

We ended our evening with a playful jarred cheesecake topped with bergamont, graham cracker crumble and blueberries paired with a stunning 25 year neat pour of Flor de Caña Rum. A perfect close to our beautiful night together!

Lake Austin Spa was a peaceful dream and was the perfect host for our Supper. We were spoiled with tranquility and amazing hospitality and food!
