On a rainy afternoon outside of Boulder, CO, our guests arrived at Little Hawk Ranch for a stunning summer Supper featuring Indian cuisine prepared by Chef Biju Thomas. Despite the wet weather, guests were greeted with warm hospitality and the inviting aromas of traditional Indian spices.

We hung out in a covered barn and waited out the rain as we pet the ranch’s rescue horses and kitties. As the rain cleared, guests were led to the outdoor dining area set in an expansive field, where our long communal table was adorned with local summer flowers. The stunning views of the surrounding mountains, enhanced by the perfect sunset, added to the enchantment of the evening. We first greeted our guests with two incredible Maker’s Mark cocktails: a Cardamon + Ginger Buck and a Palisade Peach Panna.

The menu featured locally sourced ingredients, carefully selected and prepared by Chef Biju Thomas. We were treated to the intoxicating flavors and spices of South Indian cuisine. We began with appetizers, such as charred Indian street corn, followed by a series of main courses, spiced samosas, lamb vindaloo and pan seared Colorado trout. Each dish was carefully paired with a selection of Suzor Wines, which complemented the flavors perfectly.

The evening concluded with a decadent dessert of baklava with spiced pistachio and chai creme paired with a Maker’s Mark Chai Old Fashioned providing a sweet end to a memorable night. See more of the delicious details below.

WELCOME

We welcomed our guests with a stunning Maker’s Mark cocktail: a Cardamon + Ginger Buck. We had a beautiful break in the clouds long enough for us to enjoy some sunshine for the welcome hour and meet new friends.

WINE PAIRINGS

Stunning wines from Suzor Wines, in the Willamette Valley, OR, were the perfect compliment to the jeweled menu. We toasted their 2020 Par Contre Gamay and 2020 Infinite Emotions Pinot Noir.

NIGHTCAP

We ended our evening with a Baklava with Boulder wildflower honey, spiced pistachios, chai creme and berries paired with another incredible cocktail by Maker’s Mark - a Chai Old Fashioned. A perfect close to our beautiful night together!

The Little Hawk Ranch in Boulder, CO is such a special property. Full of rescue horses who greeted our guests and gave us a stunning backdrop alongside the mountains and show stopping clouds.
